Do you ever just want a warm fresh brownie-for-one? Usually about 10pm, while you’re watching your favourite show, curled up under a blanket — with or without a glass of red?
My daughter came up with this genius hack. Make a batch of rich, fudgy homemade brownie batter and keep it in the fridge (uncooked). When you are craving a warm home-baked brownie, scoop some into a mug and pop it in the microwave for about a minute. BOOM! Instant chocolatey goodness.
Here’s our favourite brownie recipe. It’s simple and satisfying. And if you’re feeling fancy, you can doctor it up with a handful of chocolate chips, nuts, or our fave — a few drops of Peppermint essential oil.
FUDGE BROWNIES
1/2 cup butter
2 ounces unsweetened chocolate
2 eggs
1 cup sugar
1 teaspoon vanilla
3/4 cup all-purpose flour
Optional add-ins:
1/2 cup chopped nuts or chocolate chips
4 drops pure Peppermint essential oil
In a medium saucepan, melt butter and chocolate over low heat. Remove from heat. Stir in eggs, sugar, and vanilla (and optional Peppermint essential oil). Using a wooden spoon, beat lightly until just combined. Stir in flour (and optional nuts or chocolate chips).
Store in a covered container in the fridge. When a craving strikes, scoop out about a 1/2 cup into a mug, and microwave for about a minute. ENJOY!
** added bonus: pure Peppermint essential oil soothes upset stomach, so if you eat too many brownies… you are covered!
